A SweeTango Surprise: Whole Wheat Pancakes With Cheddar And Apple
MLive.com (Michigan) — If you haven’t had a SweeTango apple yet, you’re missing out. This delicious forbidden fruit is a hybrid created at the University of Minnesota in 2008. They’re crisp and juicy, just like the advertisements promise and I’ve found all sort of ways to use them in recipes. Sometimes the most unlikely ingredients make the most delicious creations. Catonsville Patch (Catonsville, Md.) — You might not think you need ideas for using up apples. But that might depend on how many apples you were ambitious enough to bring home! Apple Pie Filling: In a large pan, heat 2 quarts water, 3 cups sugar, 1/2 cup lemon juice and as many spices as you like (cinnamon, nutmeg, allspice and ginger are good, for starters.) Once it boils, stir in a solution of one cup cornstarch and one cup water. Meanwhile, pack chunks or slices of apple into six quart-sized jars. (Thinner slices yields a softer filling.) Pour syrup over apples, run a knife in and around them to ensure there are no air bubbles, and seal in a boiling-water bath for 20 minutes. Click for more recipes.

We’re offering this one up as spur-of-the-moment inspiration. Make some crispy bacon, lay a few pieces on your favorite toasted bread, add thin slices of a SweeTango apple and drizzle on some maple syrup. Amazing!
