You know it’s fall when a chilly breeze sends fiery leaves swirling around your feet, leaving you to pull your scarf a little tighter around your shoulders. And while your fingers and toes might be feeling the chill in the air, nothing warms them back up quite like an oversized, steaming bowl of soup.
Warm your hands and tingle your taste buds with this sweet and spicy Caribbean-style soup.
Ingredients:
7 cups chicken stock
4 SweeTango Apples, halved and cored, skin on
5 Sweet potatoes (average sized), peeled and chopped
1 large onion, chopped
2 jalapeño peppers, chopped, seeds removed
2 tbsp. butter
Salt and pepper to taste
Instructions:
Bring stock to boil in large heavy saucepan. Add SweeTango apple halves, sweet potatoes, onion, peppers and butter. Reduce heat; simmer, covered, until apples and sweet potatoes are very soft, about 25 to 30 minutes. Turn off heat to cool slightly.
In batches, purée the contents of the saucepan in a food processor or blender until smooth. Return soup to saucepan. Add salt and pepper to taste. Serve hot. Makes 8 servings.
Enjoy the soup for its pure deliciousness, or top with a dollop of sour cream, fresh cilantro or cubed SweeTango apples.
Tips:
- Tone down the spice by choosing a milder pepper, such as sweet banana pepper, or crank it up by leaving in a few jalapeno seeds.
- Fresh basil or Italian parsley make delicious alternatives in the sour cream garnish
- Wear rubber gloves when chopping hot peppers to keep the heat in the soup and not on your hands
