SweeTango Bread Pudding

Bread Pudding
2 Tbsp butter
6 SweeTango apples peeled, cored and diced into even pieces, bite sized
1 cup brown sugar
1 Tbsp ground cinnamon

2 ½ cups diced white or brioche bread
4 large eggs
1 tbsp. vanilla extract
1 cup cream (10%, though 5% could be used)

Melt butter in a 10inch nonstick oven proof pan over medium/high heat. Once butter is melted add apples, brown sugar and cinnamon.  Stir to cover the apples and simmer until sugar is melted, about 5 minutes.  Remove from heat and set aside.

Topping: Place cream and eggs in a large bowl and whisk together to combine well.  Add vanilla.  Add bread and let it sit in the mixture till all the liquid is absorbed, about 5 minutes.

Spoon bread topping over apple base in the pan.

Place in a 350°C preheated oven and bake until golden brown, about 30 minutes.

Serve warm
