Trout Salad

Smoky and Sweet: SweeTango Apple and Smoked Trout Salad

Minnesota is known for many things – lakes, winter, bike paths and of course as the birthplace of the delicious SweeTango apple. But did you know Minnesotans are also proud of their freshwater fish? Those 10,000 lakes are filled with delicious walleye and trout, which is why we love this recipe for a savory smoked trout salad with sweet, crunchy SweeTango apples.

Wherever you call home, this smoky and sweet salad is sure to please taste buds coast to coast.

Ingredients:

Dressing:
2 tbsp. (30 mL) cider vinegar
1 tbsp. (15 mL) maple syrup or honey
1 tbsp. (15 mL) minced shallots
1 tsp. (5 mL) fresh chopped thyme
1/2 tsp. (2.5 mL) each salt and pepper
1/2 cup (125 mL) olive oil

Salad:
2 bunches watercress
8 oz (250 g) smoked trout
2 SweeTango Apples, cored and sliced
1 cup (250 mL) toas
ted walnut pieces

Instructions:

In a small bowl, combine vinegar, syrup, shallots, thyme, salt, pepper and olive oil in a bowl, whisk together and set aside.

For the salad, wash the watercress and divide among four plates or servings. Crumble smoked trout over top and top with apples and walnuts. Drizzle with dressing just before serving. Makes 4 servings
