Apples are the most popular fruit in our fruit bowl. They are the “anytime snack” that my four-year-old son is allowed to have whenever he feels like it. He can have them before dinner, late at night, early morning, it’s the freebie snack of the day and we are more than happy to give him one at any time he longs for one.
When the kind growers over at SweeTango Apples gave me the opportunity to taste their new variety of apples, I jumped at the chance to get my hands on these delicious gems.
Ingredients:
3 cups whole milk
1 cup heavy cream
1 vanilla bean
1/4 cup sugar
pinch of salt
1 cup quinoa
1 cup SweeTango Apples, finely chopped
1 tablespoon brown sugar
1/2 cup pepitas, roughly chopped
Instructions:
Rinse quinoa in a strainer until water runs clear; about 1 minute.
In a medium saucepan, combine milk, cream, 1/4 cup sugar, salt and vanilla bean. Add quinoa, reduce heat to medium-low and stir. Cook for 30 minutes stirring frequently.
In a small bowl, place chopped apples and pepitas and sprinkle with brown sugar. Toss to combine.
To serve: scoop quinoa into small bowls or glasses and top with apple/pepita mixture.
Serves: 4
