Switch up your chicken salad routine by adding curry powder and the distinctive crunch of SweeTango apple. Not just for sandwiches, this chicken salad is served here on tender butter lettuce leaves as a quick make-ahead lunch or a tasty party appetizer. Get satisfying crunch and big flavor in one healthy bite.
Ingredients:
1/2 cup (125 mL) light or regular sour cream
1/3 cup (75 mL) light or regular mayonnaise
1 tbsp (15 mL) Dijon mustard
2 tsp (10 mL) curry powder
Pinch of black pepper
2 1/2 cups (625 mL) diced cooked chicken breast, chilled
1 SweeTango apple, diced
1/2 cup (125 mL) diced red bell pepper
1/2 cup (125 mL) chopped fresh parsley
2 heads of butter lettuce, root removed
Instructions
In a medium mixing bowl, stir together the sour cream, mayonnaise, Dijon, curry powder and black pepper. Add the chicken, apple, red pepper and parsley. Stir to combine.
Serve by the heaping spoonful on lettuce leaves.
NOTE: The chicken and apple mixture can be made up to three days ahead and kept chilled until ready to serve.
