These crunchy apple sandwiches are a perfect after school treat! Kids can add the toppings to pre-sliced apples to make their own customized healthy snack.
Ingredients
2 SweeTango apples, washed and dried
Optional 1 tsp lemon juice
2 tbsp almond butter (or nut-free spread, if you prefer)
2 tbsp toasted almonds
Chopped 1 tbsp sweetened shredded coconut
Directions
Use an apple corer to remove the core from both apples, and discard.
Slice the apples crosswise into ¼ inch rounds. If you won’t be eating the apples right away, brush the apple slices with a little bit of lemon juice to prevent browning.
Spread almond butter on one slice of apple to make the sandwich base.
Sprinkle chopped almonds and coconut over the almond butter, then top with another apple slice.
Drizzle more almond butter on top of the sandwich, and top with more shredded coconut if desired.
Makes 6 – 8 sandwiches.
