SweeTango Apple Pie Parfaits

Yogurt parfaits are an easy, healthy breakfast that you can even prepare the night before (or on the weekend when you do your meal-prep for the week). Combining crisp SweeTango apples with typical apple pie spices and a touch of brown sugar yields an apple filling that tastes a lot like apple pie. You will happily roll out of bed for this SweeTango apple pie parfait.

Ingredients
3 SweeTango apples, cored and chopped
2 tbsp lemon juice
2 tbsp light brown sugar
1/2 tsp ground cinnamon
1 pinch of cloves
Freshly grated nutmeg
2 1/2 cups (625 grams) fat-free Greek yogurt
2 tbsp maple syrup
3/4 cup granola (homemade or store bought)

Instructions
In a large bowl, combine the chopped SweeTango apples with the lemon juice, brown sugar, cinnamon, a pinch of cloves, and a sprinkling of freshly grated nutmeg. Stir well and set aside for 10 minutes, stirring every couple of minutes.

Meanwhile, mix the Greek yogurt with the maple syrup in a separate bowl.

Line up 5 mason jars (minimum 1 cup volume each).

In the bottom of each mason jar, place 2 tablespoons of granola. Layer 1/3 cup of the apple mixture, then 1/2 cup of the sweetened yogurt over top. Top each jar with another 1/3 cup of the apple mixture. If making ahead, close the jars and store the parfaits in the fridge until ready to serve. Sprinkle with a little extra granola just before serving.

Please note that you may have a little extra apple pie filling leftover, depending on the size of your apples. You can add a little extra to the parfaits, if you have room, or freeze it to add to your next smoothie.
