Amy Traverso loves apples. She channeled her passion into “The Apple Lover’s Cookbook,” which hit stores this month.

The book features 100 recipes that make apples the star of every course. From cocktails to crumbles, cooks can find great ways to enjoy their bounty of apples.

The book offers solid recipes for the basics (Apple Pie with Crumb Topping, Classic Applesauce), new spins on popular dishes (Chicken Waldorf Salad, Oatmeal-Apple Pancakes) and some gotta-try-this creations (Apple and Chestnut–Stuffed Pork Loin with Cider Sauce, Gravenstein Apple-Raspberry Tart).

Traverso also digs deep into the history of the apple. Her book also provides a thorough guide to dozens of apple varieties, including SweeTango.

Traverso, a lifestyle editor at Yankee magazine in Boston, took some time this week to answer a few question about her book, which is available via her website. The book lists for $29.95 and is available online via Amazon and other online retailers for $18.59.

Q: Why is the apple worth an entire cookbook?

Apples are so fascinating! When I started working on this project, I thought it would be a little 50-recipe cookbook, but once I began researching the history of apples—how they spread all over the world and played such a huge role in American history—and then began tasting dozens of varieties all over the country…I couldn’t stop! Honestly, I think I could write a second apple cookbook with entirely new material.

Q: What surprised you as you researched the book and gathered recipes?

The single most surprising thing was learning that apples are not native to this country. Apples are so American that you’d think that there were wild orchards growing on the shores of Massachusetts, but the sweet apples we eat today actually have their origins in the wild fruit forests of western Asia.

Q: Are you seeing a growing awareness and appreciation of apples and the range of varieties in the U.S.?

Yes. There’s both a growing interest in antique and heirloom varieties and an excitement about newer varieties like Jazz, Honeycrisp, and SweetTango. But isn’t it interesting that even the most casual shopper understands that apples are varietal fruits? Strawberries and bananas come in different varieties, too, but only apples have earned the right to be identified by name.

Q: What are two or three varieties that you enjoy and how do you use them?

Two unusual apples that I love are the Calville Blanc d’Hiver, a gorgeous French variety that is the official apple for tarte tatin, and Pink Pearl, a pink-fleshed apple from northern California that dates back to the 1940s.

Q: And finally, have you tried SweeTango? What do you think?

I honestly think it’s a fantastic apple, with great mix of sweetness, acidity, aromatics, and juiciness. These newer breeds really appeal to contemporary palettes. I think of them as the apple equivalent of a really great, big, juicy California wine. I think they’re reintroducing people to the joys of eating fresh apples.

Minneapolis Mayor R.T. Rybak is willing to risk some tasty SweeTango apples in a friendly wager with his counterpart in Phoenix over a WNBA playoff series.

Rybak is betting the Minnesota Lynx will defeat the Phoenix Mercury in a series that tips off tonight in Minneapolis. Phoenix Mayor Phil Gordon is countering with Arizona-made hot sauces and salsas.

If the Lynx win, Rybak will be burning his tongue on some tasty condiments. If the Mercury win, Rybak will part with a batch of SweeTango, which was developed at the University of Minnesota.

We’re biased, but we tend to think the Minneapolis mayor is putting up a lot more than the Phoenix mayor. SweeTangos are the tastiest new apple variety around, after all.

Then again, we’re fairly certain the Lynx will take this series anyway.

So is Rybak. Here’s the mayor taunting his rival in Phoenix, first on Fox9 news (the mayor comes on at the 1:18 mark) and on the Star Tribune.

Minnesota apples vs. Arizona hot sauce at stake as Minnesota Lynx meet Phoenix Mercury in second round of WNBA playoffs

September 22, 2011 (MINNEAPOLIS) — Minneapolis Mayor R.T. Rybak and Phoenix Mayor Phil Gordon today placed a friendly wager on the outcome of the WNBA Western Conference semi-finals between the Minneapolis-based Minnesota Lynx and the Phoenix Mercury. The series begins tonight at the City of Minneapolis-owned Target Center.

Mayor Rybak is putting up SweeTango apples from Pepin Heights Orchards in Lake City, Minnesota against a basket from Phoenix Mayor Gordon with Arizona-made hot sauces and salsas.

Mayor Rybak said, “We know it’s going to be a good series: these two teams played the highest-scoring game in WNBA history against each other this season, but the Lynx are tough competitors and I’m confident that Minnesota’s women hoopsters will carry the day.

“I look forward to trying Arizona’s best hot sauces and I’m only sorry for Mayor Gordon that he won’t get to taste our delicious Minnesota apples.”

“Minnesota won an impressive number of basketball games this year, but they need two more and won’t get them,” said Phoenix Mayor Phil Gordon. “Phoenix has the edge because Phoenix has the Mercury. I’ll make that bet all day long — while eating their wonderful apples.”

Ann Laatsch of Wisconsin was happy to pick up a free box of SweeTangos in Milwaukee. She was one of two winners of our First Bite giveaway, which gave apple lovers a crack at some of the first SweeTangos harvested this season.

Apple grower Steve Wood from Wood Orchard in Door County, Wis., delivered the prize. He drove to a Sendik’s Food Market in Milwaukee to give Laatsch apples from his orchard.

Laatsch said she’s been a SweeTango fan ever since her mom gave her a bag from Wood Orchard.

“I couldn’t get over how delicious they were,” she said. “They were sweet, juicy, and crisp — which is so hard to find. I hate being disappointed by a mealy apple.”

Laatsch said she was thrilled to win the First Bite prize.

“When I learned that I had won, I was delighted — not just because I seem to enter contests and drawings all the time and never win, but more importantly, because I’m guaranteed to get some apples this year!”
